Ostrich meat is exquisite. It is dark red in color with a mild and flavorful taste and texture similar to beef tenderloin but without the fatty residue. Ostrich is classified by the USDA as 'poultry'. It is processed and packaged under strict USDA guidelines.

All meat comes completely boneless, reducing prep time and eliminating lost profits from trimming the meat. Because of the extremely low fat content in the meat there is virtually no shrinkage, giving the end user nearly 100 percent yield.
